Bone-out chicken thighs brown fast and stay juicy. The zucchini goes in after, so it stays tender rather than turning soft. Garlic butter ties it together without any extra sauce-building. This is the kind of dinner that asks almost nothing of you on a weeknight.

Ingredients

Method

  1. Toss the chicken pieces with the smoked paprika, oregano, half the salt, and half the pepper until evenly coated.

    2 min
  2. Heat the olive oil in a large skillet over medium-high. Add the chicken in a single layer and leave it alone for 3–4 minutes until the bottom is golden. Stir and cook another 2–3 minutes until cooked through. Transfer to a plate.

    7 min
  3. Reduce the heat to medium. Add 1 tablespoon of the butter and the onion to the same pan. Cook, stirring occasionally, until the onion is soft and starting to go translucent — it will pick up the browned bits from the chicken as you stir.

    5 min
  4. Add the garlic and cook for 1 minute until fragrant. You should smell it within thirty seconds; pull it off if it starts to color.

    1 min
  5. Add the zucchini and the remaining salt and pepper. Cook, stirring occasionally, until the zucchini is just tender when you press it with a spoon but still holds its shape — not soft or watery.

    4 min
  6. Return the chicken and any resting juices to the pan. Add the remaining 2 tablespoons of butter. Toss everything together over the heat for 1 minute until the butter melts into a light sauce and the chicken is warmed through. Squeeze over the lemon, scatter the parsley, and serve straight from the pan.

Substitutions

  • Chicken thighs — Chicken breast works but cooks faster; cut into the same size pieces and check at 4 minutes total — it dries out quickly if overdone.
  • Zucchini — Yellow summer squash is interchangeable. Eggplant also works but needs an extra 2–3 minutes and benefits from a pinch more salt.
  • Fresh parsley — Fresh basil or a few snips of chives are both good here. Dried herbs are not worth it as a garnish.
  • Smoked paprika — Regular sweet paprika is fine; it just won't have the smoky edge. A pinch of cayenne alongside it adds some warmth.

Storing leftovers

Keeps for up to 3 days in the fridge. The zucchini softens on reheating — that is normal. Reheat gently in a pan over medium-low with a splash of water to loosen, or briefly in a microwave covered to trap steam. Not ideal for freezing; the zucchini turns watery once thawed.

Questions

My zucchini released a lot of water and the pan went soupy. What happened?

Zucchini is mostly water and releases it when hot. Two things help: make sure the pan is properly preheated before the zucchini goes in, and don't crowd it — if your skillet is small, cook the zucchini in two batches so it sears rather than steams.

Can I use bone-in chicken thighs?

Yes, but they need longer — 20 to 25 minutes total rather than 7. Sear skin-side down first over medium-high for 8–10 minutes until the skin is crisp, then flip and cook through. Add the onion, garlic, and zucchini once the chicken is off the heat resting.

Is this enough for four people as a main?

It is a light main on its own. Serve it over rice, couscous, or with crusty bread to make it more filling. The pan juices are worth soaking up.
